Had a little Sunday brunch yesterday. I made a bacon frittata. It’s quick, easy and …..good! Give it try. Here’s my recipe:

8 eggs
2 Tbsp. water
1/2 cup chopped seeded tomato
1 cup shredded mozzarella cheese, divided. Or your favorite maybe cheddar or Swiss
4 or 5 slices of cooked bacon
1/4 cup chopped fresh basil
Optional: A pinch of sea salt, ground black pepper and a sprinkle of smoked paprika.

Preheat the oven to 350°F.

Whisk the eggs and water in a mixing bowl. Stir in tomato, 1/2 cup of the cheese, bacon and basil.

Grease 9-inch pie plate ( I use a natural spray on Canola cooking spray).

Bake for 20 minutes, then sprinkle with remaining 1/2 cup of cheese.

Bake for additional 15 minutes. The frittata is done when it puffs and or turns golden brown.

Serves 6-8.
