Summer is here and that means firing up the grill! For something different, grill the flavor of Morocco with these tasty Moroccan Beef Kebabs. They are truly delicious. I got this recipe from The World of Kebabs by Anand Prakash. In our family it’s grilling season year round. Enjoy. Tom~

Moroccan Beef Kebabs

Marinade: 2 medium onions, coarsely chopped / 1/2 cup chopped flat-leaf parsley / 1/2 cup chopped cilantro leaves / 1/4 cup olive oil / 1/4 cup lemon juice / 1 Tbsp paprika / 1 tsp garlic paste / 1 tsp ground cumin / 1 tsp ground coriander / 1 tsp freshly ground pepper / 1/2 tsp chili powder / 1 tsp salt

2 lbs lean beef cut into 1-inch cubes

Blend marinade ingredients in a blender or a food processor and place in a non-reactive bowl. Add beef cubes and toss well to coat. Cover and marinate overnight in the refrigerator.

Remove beef and reserve marinade. Thread 6-8 beef cubes onto each skewer. Grill on high heat, turning and basting frequently with reserved marinade, approximately 5-6 minutes for medium doneness. Serve with tomato-onion salad, and a mixture of salt, cumin and chili powders.
