The tomatoes are in and at our house; that means lots of spicy hot salsa! This salsa is made from home grown tomatoes for that fresh taste of summer. If you don’t grow tomatoes you can buy them at farmer’s markets this time of year. Use this recipe as a guideline. I bring this salsa to a simmer to really blend the flavors before adding the avocado. I also use a whole habanero pepper because I like the heat. The result is a fresh, flavorful salsa. Enjoy. Tom~

Summer Salsa

3-4 tomatoes, chopped / 1 small onion, quartered / 1/2 or whole habanero pepper, chopped / 2 cloves garlic, minced / 1/4 bunch cilantro, chopped / 1 avocado, chopped / Old Bay seasoning to taste, freshly ground pepper to taste, big pinch of cumin / olive oil

Process the tomatoes, onion, habanero pepper, garlic, and cilantro in a food processor to a smooth consistency. Heat a tablespoon of olive oil in a saucepan. Add the processed ingredients, the Old Bay (or your favorite seasoning), ground pepper and cumin to the saucepan and stir. Bring to a boil and simmer for 1 minute, stirring most of the time. Remove pan from heat and add the chopped avocado. Stir and taste for seasoning. Serve warm or at room temperature with your favorite tortilla chips.
